Foodie Friday Carrot Cheesecake

Hello again, and thanks for coming by the Lace and Ivy Cottage. I've been experiencing some technical difficulties with my computer and lost my internet connection for most of the week. Ugh! But at least I made it back in time for Foodie Friday hosted by Designs by Gollum. Make sure to pay her a visit for more mouth watering recipes.

This weeks recipe is a delicious Carrot Cheesecake. I can't take credit for creating this recipe. It's actually from Better Homes and Gardens, but I did test it for you and it's a keeper!
It doesn't look too pretty, but this is also how it looked in the magazine.






Carrot Cheesecake

1 package 2 layer size carrot cake mix
1 C water
1/2 C cooking oil
6 eggs
1/2 C raisins
3 8 oz pkg. cream cheese, softened
1 1/2 C granulated sugar
2 tsp. vanilla
1/2 C coarsely chopped candied walnuts
1 C powdered sugar
3 to 4 tsp. milk

  1. Preheat oven to 325 deg. F. Grease and flour 10-inch springform pan; set aside. In large bowl, combine carrot cake mix, 1 C water, oil, and 3 eggs. Beat with an electric mixer on low for 30 seconds. Beat on medium speed for 3 min. Fold in raisins. Pour into pan.
  2. In another bowl, beat cream cheese with mixer on medum speed until smooth. Beat in granulated sugar and vanilla until smooth. Beat in remaining 3 eggs. Pour slowly over carrot cake layer. Place cheesecake on baking sheet.
  3. Bake for 1 1/2 to 1 3/4 hours or until center is set (top will be uneven and center may fall slightly as it cools). Cool 30 min. Romove sides of pan; cool completely, and refrigerate at least 4 hours before serving.
  4. Top with candied walnuts, if desired.
  5. In medium bowl combine 1 C powdered sugar and enough milk to make of drizzling consistency. Cut cheesecake into wedges and place each wedge on serving plate. Drizzle each piece with icing.

I recommend this recipe, it was easy and delicious. But if you decide to make it, start it early in the morning or the day before because it requires a lengthy time in the fridge to cool.

I love homemade cheesecake but it does take a while to master, and all day to cook and then cool, Never heard of this one! carrot cake!!
